Oil-Free Air Fryer Sweet Plantains

Ripe plantains cut into long strips and air fried without oil until golden and caramelized at the edges.

Method

  1. Pick ripe plantains: yellow with plenty of black spots, or mostly black. The riper they are, the sweeter.

  2. Cut off both ends, slit the peel along its length and pull it off. Cut each plantain in half across, then lengthwise into strips about 1 cm (½ inch) thick.

  3. Lay the strips in one layer in the air fryer basket, without oil, on a piece of parchment paper so the sugars do not stick.

  4. Air fry at 190 °C (375 °F) for 12 to 16 minutes, turning the strips halfway, until golden with dark caramelized edges.

  5. Let them rest for a minute, then serve warm.

Tips

  • Green plantains do not caramelize: they are starchy and stay dry. Keep them for patacones.
  • Parchment paper slows the air a little; if the tops stay pale, give them 2 or 3 minutes more.
