Cadmium in Food — FDA Total Diet Study
How much cadmium the US FDA measured in everyday foods, food by food.
Good to know
Cadmium concentrations (µg/kg = ppb) in 308 foods from the FDA Total Diet Study FY2018–FY2022. Cadmium accumulates in kidneys over a lifetime — dietary variety is the most effective strategy for managing exposure.
Managing cadmium on a plant based diet
Dietary variety is your best protection. Rotate grains, vary leafy greens, and enjoy cocoa in moderation. See also lead in food and arsenic in food for a complete heavy metals picture.
Questions
What is the FDA Total Diet Study?
The FDA's Total Diet Study is an ongoing market-basket survey measuring contaminants and nutrients in ~300 representative US foods, prepared as eaten and collected four times per year across different regions. It has run since 1961. This data covers FY2018–FY2022, using the hybrid-bound method to handle non-detects.
What are practical daily tips to reduce cadmium exposure while staying plant based?
Key strategies: (1) Rotate grains — don't eat rice or wheat at every meal; (2) Vary leafy greens — alternate spinach with kale, bok choy, arugula, watercress; (3) Limit cocoa powder to moderate amounts and enjoy dark chocolate as a treat; (4) Maintain good iron status — iron and calcium compete with cadmium for absorption; (5) Eat plenty of fresh fruit — low cadmium and high in nutrients that support detoxification.
Does a plant based diet increase cadmium exposure?
Plant foods are the main dietary cadmium source because plants absorb it readily. However, dietary variety makes this manageable — rotating food types distributes cadmium across many foods at low individual doses. A plant based diet also avoids organ meats (especially kidneys), which are the highest-cadmium animal foods and a significant source for meat eaters.
Why are sunflower seeds high in cadmium?
Sunflowers are cadmium hyperaccumulators — so effective that they're used in phytoremediation to clean contaminated soils. This same efficiency makes sunflower seeds and sunflower oil relatively high in cadmium. Rotating with other seeds (pumpkin, flax, hemp, sesame) and nut butters provides equivalent nutritional benefits with diversified cadmium intake.
Does cooking reduce cadmium in plant foods?
Boiling vegetables in water can reduce cadmium by 20–40% as some leaches into the cooking water. Steaming and roasting have less effect. Peeling root vegetables removes some surface cadmium. The FDA TDS values shown reflect foods prepared as normally eaten, so cooking effects are already accounted for.
Is brown rice higher in cadmium than white rice?
Yes, generally. Brown rice retains the bran layer where cadmium (and arsenic) tends to concentrate. White rice has the bran milled off, reducing both. However, brown rice retains more nutrients including B vitamins, fiber, and minerals. Rotating rice varieties and rice with other grains (oats, quinoa, millet, barley) balances nutritional value with contaminant management.
